Ingredients:
1 cup whole wheat flour
1 1/4 cup grated carrot
1/2 cup brown sugar
3 tbsp butter
3/4 cup milk
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp cinnammon powder
1 pinch nutmeg powder
1 pinch cardamom powder
1 pinch salt
Combine flour, baking soda, baking powder, salt and all the spices.
Cream butter and sugar. Add the flour mixture, carrot and milk and mix well.
Line a muffin pan with paper muffin cups. If you don't have them, you could grease the pan. Pour the batter into the cups so that they are 2/3rds full.
Bake at 350F for 25 minutes (or until fork inserted comes out clean). And enjoy the healthy muffins.

I haven't tried, but usually you can replace brown with regular sugar.
